We started with Frijoles Charros, beans cooked in beer sauce, and a trio of dips – guacamole, beans, sour cream, chilli, salsa Fresca, and served with corn chips. I progressed to Mole Poblano – Grilled chicken bathed in homemade mole sauce (dried chillies, seeds, nuts, spices, vegetables and Yes! chocolate) Perfecto! … whilst my dining companions enjoyed the Cerdo En Salsa Verde – Pork and jalapenos simmered in onion and green capsicum sauce, with guacamole, rice and two tortillas, and Cochinita Pibil – Pork marinated with achiote, black peppercorns, orange and lemon juice. Served with rice and whole beans and topped with pickle onion.
